Star Wars Menu: “R2-DChews” by Astrid Tuttle Winegar

I’m wondering if the feisty and generally disrespectful R2-D2 might have a small refrigerated compartment where he could store some goodies. If so, he might favor these delicious bars, which were designed with colors that are vaguely similar to his own outward appearance. I’ve always loved the insulting camaraderie between R2 and C-3PO; for every “beep boop chirp bleep bloop chirp,” there is “you nearsighted scrap pile” or “you overweight glob of grease.” In the end, however, there is also “You must repair him! Sir, if any of my circuits or gears will help, I’ll gladly donate them.” We should all have friends as loyal.

“R2-DChews”

¼ cup plus ½ cup sugar
¼ cup all-purpose flour
¼ teaspoon plus ¼ teaspoon salt
4 whole graham crackers
¼ cup salted butter; melted and cooled a bit
1 pound light cream cheese (Neufchâtel), softened
2 extra large eggs
1 teaspoon vanilla extract
¼ cup 1% milk
1 cup blueberry preserves

Preheat oven to 350°. Coat an 8″ by 8″ glass pan with cooking spray. Place ¼ cup sugar, flour, ¼ teaspoon salt, and graham crackers in a large food processor and process well. Add the butter and process until fully mixed. Press into the prepared pan evenly (don’t bother washing the processor bowl).

Combine the cream cheese, ½ cup sugar, eggs, ¼ teaspoon salt, vanilla, and milk in the processor bowl and process until fully mixed. Pour into the pan. Mix the preserves well. Dollop all over the cheese mixture in tablespoon portions. Swirl with a knife without disturbing the crust. Bake 45 minutes. Cool on a rack 1 hour. Refrigerate at least 6 hours, or even overnight. Cover and chill leftovers. Makes 20.
